Norway Guinness World Record: Largest Sushi Mosaic

Bodo, Norway – October 8, 2016 – The largest sushi mosaic – measuring an incredible 56.50 square metres and including a whopping 800 kg of salmon and 400 kg of rice created in Norway has set a new world record, according to the World Record Academy.

The Guinness World Records world record for the longest sushi roll measured 2,521.74 m (8,273 ft 4.92 in) and was achieved by Sushkof Restaurant (Russia) at Mega Shopping Mall in Yekaterinburg, Russia, on 12 December 2011.

Guinness World Records also recognized the world record for the largest rice ball mosaic; it is 113.96 m² (1,226 ft² 100 in²) and was created by The World Largest Rice Ball Mosaic Art Project (Japan), in Shibuya, Tokyo, Japan, on 11 March 2013.

About 200 litre of rice vinegar, 480 kilogrammes of cucumber and 10 kg chives were used in creating the mosaic.

The edible artwork was created by four chefs, led by Leonardo Figueroa who runs a sushi bar in Sweden at the Aspmyra Stadion, football stadium in Norway.

“Because of the rules from the Norwegian food council the sushi mosaic could only stay two hours outside in the football stadium. We were in a hurry in the end and I was close to a heart attack,” said Mr Aguilar.
